Our oil comes from a historical and cultural journey that mixes ancient knowledge and daily effort to live with an impervious and not always friendly nature. The result is a passionate narrative of taste and sensoriality.

"VALLEROSA" COMPANY
A small family-run business that Andrea and Valerio, great-grandsons of Orlando, the first owner of the land, run with passion and competence, adding to the tradition handed down for generations, that modern knowledge necessary to produce high quality products. The "Vallerosa" company takes its name from the locality of the same name, located in the municipality of Ischia di Castro, a village in the province of Viterbo where the olive tree seems to be an integral part of the landscape. The soil, rich in minerals, unsuitable for many crops but excellent for olive trees, also allows the growth of particular spontaneous herbs including helichrysum, fragrant savory and in the areas left uncultivated, a vast variety of wild orchids which have allowed to the area being identified by the European community and the Lazio region as a "site of community interest".
Even the growth of tall trees seems to be conditioned by the particular properties of the earth and their original shapes, almost as if they were artfully modeled, contribute to making the landscape of the entire area even more singular. -
OUR HISTORY
It all started four generations ago, when Orlando decided to reclaim the area which until then was partly wooded and partly cultivated with cereals, planting olive trees which are still cultivated today. The rehabilitation of the land brought to the surface a large quantity of stones used by the "grandfather" for the construction of the dry stone wall that delimits the boundaries of the entire land, (Pietraia or saxētum) characteristic of the Vallerosa area, symbol of the company and from which the oil produced "SAXETUM" takes its name.

OUR TERRITORY
Vallerosa is located near the municipality of Ischia di Castro (VT), halfway between Lake Bolsena and the Tyrrhenian Sea, at a height above sea level of around 300 metres. The relative proximity of the sea with its mitigating action and the protective shield presence of the hills in the part facing north, combined with optimal exposure in terms of radiation, make these places an ideal habitat for the cultivation of olive trees. The oil produced by Noi is exclusively Extra Virgin Olive Oil which not only respects the category parameters but has excellent values which also translate into gustatory appreciation for consumers.

WHERE DO YOU THROW THE OIL BOTTLE?
Oil bottles are made of multiple materials: glass (the body) and plastic or plastic/metal (the cap). Once the oil inside has been used up, the cap must be separated from the body of the bottle. It will thus be possible to throw it into the separate waste collection container dedicated to glass. The cap, however, should be thrown into the separate waste collection container dedicated to plastic or in the undifferentiated waste collection container.
Separate waste collection is very important, it helps industry and saves energy. This allows us to recover raw materials in an economical way, furthermore this process is equivalent to preserving the health of all of us.
Our passion, our life, our oil!
